1. Regina Bistecca

    A wood-fired steak restaurant a short walk from the Duomo, housed in what used to be an anatomical theatre, which tells you this city has always had a flair for the dramatic. Dry-aged Italian beef over an open flame, a Tuscan wine list that actually knows what it's doing, and a room full of vaulted ceilings and antique bookshelves that somehow never feels stuffy. The crowd dresses up a little, and it feels right.
