The restaurant takes its name from a Neapolitan fisherman's dish, poached white fish in seawater, which so captivated the chef that he built a whole Italian kitchen around it. The signature version swaps in freshwater and adds Manila clams, a quiet piece of culinary problem-solving that somehow makes it taste more of the sea.
