The restaurant's name comes from an archaic Japanese word for tomato, a small fact that unlocks the whole project: French technique absorbed and made Japanese, the way the tomato was. On the tenth floor in Kitaaoyama, the kitchen folds dried bonito, miso, and charcoal fire into a French framework, serving soup in lacquerware bowls while traditional painting motifs line the open kitchen. It's a thoughtful, quietly confident dinner out.
