    A Michelin-starred tasting menu restaurant tucked into a Maltese villa above Balluta Bay, where the first-floor dining room feels deliberately removed from the street and tourist noise below. An Italian chef runs the kitchen, putting out six or eight course surprise menus that lean contemporary and international without losing the thread back to Malta, including local cheeses from small producers that show up late and earn their place.
