  1. Dinner here begins with aperitifs downstairs in a small parlour before guests move up to a horseshoe counter of bar chairs, which sounds casual until you notice the two Michelin stars. Chef Julian Stieger's tasting menu is modern and precise without being showy, the kind of cooking where a slice of black pudding bread with apple and truffle shavings makes a quiet, confident case for itself. The service is warm rather than stiff, which helps considerably at that altitude.
