Upstairs on Dosan-daero, Sanro is a washoku dining room where the art objects on the walls seem chosen by the same sensibility that shapes the menu, which is either a coincidence or a very intentional person running the kitchen. The chef builds a meal around seasonal ingredients and restrained technique, letting quiet flavors accumulate course by course rather than announce themselves. Service runs as composed as the food.
