The surprise tasting menu changes daily, leaning plant-forward without making a fuss about it. Industrial bones, rough wood tables, and easy service keep things grounded. It holds a Michelin star and a spot on the World's 50 Best list, and the scramble for reservations has become its own Parisian ritual.
