    Live seafood tanks line the walls of this Michelin-starred Cantonese restaurant on the third floor of a Wan Chai hotel, giving it the feel of a place that never needed to be trendy. The roast suckling pig, booked in advance, arrives with skin so thin it shatters. Old-school classics fill out the menu, and the kind of regulars who know to reserve the pig months ahead fill out the room.
