A Michelin-starred room in Wan Chai dedicated to Taizhou cuisine, the cooking tradition from Zhejiang province that the mainland outpost of this same group has turned into a three-star affair in Beijing. The kitchen keeps things deliberate: a short roster of ingredients, seasonal produce, flavours left to speak without much interference. The yellow croaker soup and roast duck are the two dishes regulars tend to circle before they even sit down.
