Ten seats at a counter in LES, where a shabu shabu omakase runs at whatever pace you set. The team swishes prime pork belly and A5 wagyu through boiling broth before finishing each piece in sweet soy, ponzu, or miso, and the volume of wagyu is such that you'd expect to feel pinned down by it, yet the lighter pairings keep everything moving. Spanish and Italian touches appear occasionally, and somehow they fit.
