Shugetsu
Noodles
Smoke hangs in the air from the moment you walk into this small ramen shop in Fremont, which is a pretty good preview of what's coming. The specialty is tsukemen, where thick chewy noodles and a deeply concentrated dipping broth arrive separately. When the broth runs low, ask the staff to top it with hot chicken stock. The San Francisco Chronicle named it among the Bay Area's best ramen spots, and the smoke and pork anchovy depth make a reasonable case.
