An L-shaped counter wraps around the chef at this modest sushiya in SoHo, where an omakase at a price that won't require a sit-down conversation with your accountant moves through a long parade of nigiri and small courses. The kitchen leans classic, with the occasional flourish, caviar on shima-aji, say, landing without fanfare. The mango sorbet at the end beats the green tea ice cream every time, but nobody told you that.
