White subway tile, a wooden counter, and seats that stay full from open to close: Sushi-Wa is a small omakase room tucked into a warehouse district better known for its breweries. The chefs settled into Edomae-style sushi after some searching, and the result is a measured, unhurried procession of bites where restraint does most of the work. A surprising address for this kind of precision, but Charleston has learned to make the trip.
