Perched on Fourvière hill with Lyon spread below it, this Michelin-starred fine dining restaurant is the house that Christian Têtedoie built in the tradition of Paul Bocuse. The cooking runs classical French through a contemporary filter, and the menu reads a bit like an abstract art catalogue, which is very much the point. The lobster casserole with calf's head cromesquis, cheekily rebranded HTV, has become the kind of signature a chef earns over a lifetime.
