    Every seat in the house is a counter seat, right up against the open kitchen, where the chefs narrate each course as it lands. Mitja Birlo's tasting-menu restaurant near the main train station holds two Michelin stars, and the format earns them quietly: a long, unhurried surprise menu that shifts between European and Asian influences with enough ease to make the combination feel obvious in hindsight. Clear an evening.
