Brett Graham raises pigs on his own farm, grows mushrooms in a cabinet downstairs, and then turns up for service at one of London's most serious fine dining rooms. The Ledbury holds three Michelin stars and sits fourth on the National Restaurant Awards list, but the room's warmth keeps it from feeling like a pilgrimage. Graham is famously media-shy, which mostly just means the cooking has to do the talking.
