    Literally carved into the volcanic tufa of Uçhisar, this small cave hotel sits high enough to put Cappadocia's fairy chimneys and rock-cut valleys at your feet. Rooms run from compact to arched suites with hammams and underfloor heating, which keeps the ancient geology from turning on you overnight. Hot air balloon rides over the landscape at dawn are easy to arrange, assuming you can leave the view from bed.
