Ugo Chan
Japanese
The name comes from chef Hugo Muñoz's childhood nickname, which is either charming or a very on-brand move for a Michelin-starred Japanese restaurant in Madrid. Counter seating faces an open kitchen where the menu shifts constantly, with an omakase option alongside à la carte. The cooking is Japanese at its bones, but Madrid tripe finds its way into gyozas and nothing stays fixed long enough to feel like a greatest hits set.
