A one-star Michelin kaiseki spot in Osaka's Kita-ku where the chef's daily knife practice is more than ritual: he believes the cut itself changes how sashimi tastes, and watching him work makes that case quietly but clearly. He came up in Hozenji Yokocho and carries those lessons forward without imitating his mentor, which is rarer than it sounds. The name, roughly "the here and now," is also the menu's thesis.
