A multi-course regional tasting menu in a snug Alpine dining room, where the chef raises his own pigs, sources predominantly organic produce, and hand-carves some of the wooden cutlery you'll eat with. He presents each course himself and explains what he was thinking, which sounds like it could be tedious but somehow isn't. The cooking leans into local tradition without getting stuck there, and the front-of-house team runs things with genuine warmth.
