  1. Tucked into an inner courtyard in Zurich, this Michelin-starred bistro runs on a surprise menu of four to six seasonal courses where vegetables do most of the talking. The cooking is pared back and precise without feeling ascetic, and the menu lists ingredient provenance for anyone who wants to follow up. An open kitchen keeps the room from taking itself too seriously, which, for a one-star spot, is a minor achievement in its own right.
