    The moles here travel by region, Oaxacan one night, Yucatecan the next, because the chef grew up in Zacatecas and cooks like he has something to prove about how wide Mexican cuisine actually runs. This is a proper sit-down restaurant with plated ambitions and a menu that resists the Southwestern shorthand most of Santa Fe defaults to. A James Beard nominee for Best Chef: Southwest in 2024.
