The view from the top floor of the Museum aan de Stroom takes in the whole Antwerp skyline, which is a strong opening move for a three-Michelin-star creative restaurant. Viki Geunes runs a stripped-back room, elegant and quiet except for an old record player adding a jazzy hum, and builds dishes that are intricate without fussing about it. The kind of place where the sauces alone warrant a moment of silence.
