    Three sommeliers on the floor is a commitment most neighborhood bistros don't make, and Zoldering leans into it hard. This Michelin-starred French bistro on Utrechtsestraat is lively downstairs and quieter up, with the cosy dim of a classic Amsterdam café either way. The cooking is modern French with serious sauces, and the wine program runs two separate lists, one approachable, one for the obsessives who came prepared.
