Steven Holl's crumpled aluminum cube rises over Kamptal Valley vineyards like something that landed there by accident, which is a fine way to arrive at a wine-and-spa resort. Rooms come in unexpected geometries that feel nothing like the spa-hotel template, and the Aveda Wine Spa runs to a thousand square meters with a heated outdoor pool. The nine-centuries-old cellars sit directly beneath it all, which the 21st-century architecture is polite enough not to mention.
