A Michelin-starred fine dining room inside Hotel Traube Tonbach where the philosophy is restraint, not abundance. Chef Florian Stolte runs two six-course menus, one vegetarian, with a minimalist touch that lets Japanese influence drift quietly through European ingredients. The room is intimate and low-key for somewhere this serious about itself, and the front-of-house team is warm rather than stiff, which makes the whole exercise feel less like a ceremony.
