Floor-to-ceiling glass frames the Black Forest valley at this three-Michelin-star fine dining restaurant inside the Traube Tonbach hotel. The kitchen, led by chef Torsten Michel, moves between classical French technique and modern invention without tipping either way, and the cheese trolley still makes its rounds, which tells you something about the room's priorities. Tasting menus run short or long, with a vegetarian option and à la carte for two.
