Umberto Bombana named his fine dining room after a Fellini film, which tells you something about how seriously he takes beauty. Tucked into one of Central's grand towers, it holds three Michelin stars and a wine list deep enough to get lost in. The pasta course is the moment everyone waits for, and gelato finished tableside by the maître d' closes things with a quiet flourish. Formal, unhurried, and built for a long evening.
