A small, intimate restaurant in Palermo's historic center where the chef reframes Sicilian classics with a modern eye, meat and fish both getting the treatment. The wine list runs entirely Sicilian, with its own section carved out for Etna wines by subregion, which tells you where the kitchen's loyalties lie. The room is simple and the cooking is the point.
