Eight seats per service is the whole plan at Akase, a Japanese omakase-style restaurant in Jerez where the chef runs a single tasting menu built around Cádiz seafood treated with Japanese technique. Cuttlefish arrives sliced usuzukuri-thin, blue crab goes into sake, and local whiting gets cured. Dessert pivots to koji fermentation and bubble tea that somehow loops in the sherry bodegas outside. Book ahead, obviously.
