The restaurant takes its name from a carp species, which tells you something about how seriously the chef takes the Loire. Set on the first floor of a modern extension with big windows over the river, it's a wood-panelled dining room that feels calm and considered. The cooking leans classical, drawing on local poultry, river fish, Sologne lamb, and Wagyu from the chef's own farm, all handled without fuss.
