A yakitori omakase in Higashiazabu where the meal is structured like a sentence, salt in the first half, sauce in the second, the progression deliberate and unhurried. Seasonal vegetables open the menu, cuts of chicken are sourced from various regional farms, and small courses like chicken-shinjo wanmono fill the gaps between skewers. Takikomi-gohan of vegetables and minced chicken closes things out, which is either humble or quietly confident, depending on your mood.
