The chef throws his own ceramics, which tells you something about how seriously this Michelin-starred kappo restaurant takes the full picture. He came from Nagasaki, fell hard for Kyoto's larder, and now spends his days foraging wild plants in Miyama and fishing for sweetfish in Shiga before serving what he finds on plates he made himself. His wife is beside him through all of it, and the room feels exactly that personal.
