A Michelin-starred ryotei in Shimogyo-ku where the kaiseki menu shifts with Kyoto's seasonal calendar, and the chef also keeps a running correspondence with cooks overseas, which is either restless curiosity or very good email habits. The team built out a dedicated pairing of dishes suited to wine, folding a Western lens into a deeply classical Japanese format. Formal enough to dress for, unusual enough to think about afterward.
