    Rooms carved from volcanic tufa, kilim rugs on the floor, a working fireplace, and a pool positioned to catch the hot-air balloons drifting past at sunrise: Aza is a cave hotel that doesn't apologize for leaning into the drama. The family behind it has been building and running places like this in Göreme forever, and this is their most polished effort. Guests also have access to Seten, the family's fine-dining Anatolian restaurant next door.
