    Guests arrive to Ottoman sherbets and Turkish delight, which sets the tone for this family-run cave hotel in Göreme operating under halal tourism principles. The suites are carved from the same volcanic rock that shapes the whole valley, some with private rock-cut pools or a Turkish bath. Breakfast is laid with homemade dishes while fairy chimneys fill the window. Most mornings, hot-air balloons drift past before you've finished your tea.
