Sultan Cave Suites

Carved into a terraced hillside above Göreme, this 35-room cave hotel is built from hefty limestone blocks rather than simply hollowed out, so the arches and columns feel deliberately made rather than accidentally ancient. Rooms range from doubles to suites roomy enough for copper soaking tubs. Balconies look out over the balloon-dotted Cappadocian sky, which is either romantic or a lot, depending on your disposition. The on-site restaurant serves Anatolian food; staff can arrange the obligatory aerial tour.
