    A small cave hotel carved into the tufa of Göreme, where the terrace happens to face the full sweep of valleys that the hot air balloon fleet rises over at dawn. Rooms have names like the Warehouse and the Barn, and each one has its own arrangement of stone arches, kilim rugs, and carved wooden furniture. Horseback rides through the vineyard valleys and ATV tours are arranged through the front desk, which saves you the usual faff.
