    Andrea Berton's Michelin-starred fine dining room sits in Porta Nuova, Milan's glassy, self-consciously futuristic quarter, which suits the aesthetic perfectly. The kitchen works with very few ingredients at a time, letting each one carry weight rather than hiding behind complexity. The "Non Solo Brodo" menu, built around broths poured tableside or served in a glass alongside the plate, has become the signature move, quiet and theatrical at once.
