A former fire station in Oakland's Dimond District, Bombera earns its name twice over: "firewoman" in Spanish, and the wood-fired oven at its heart burns corn husks whose ash goes straight into the masa. It's a contemporary Mexican restaurant where the tortillas are nixtamalized in-house and the moles are layered enough to make you stop mid-sentence. The Michelin Bib Gourmand and a spot on the L.A. Times' California 101 follow naturally from that kind of seriousness.
