The bread arrives first, grilled in a pan over coals and served with smoked butter, and the chefs at this wood-fire steakhouse are the first to admit nobody forgets it. Open flames handle everything from Friesian chuletón to whole fish to seasonal vegetables, and the dry-aged beef programme takes provenance seriously enough to include rare Gascón pigs from France. The room is dim, warm, and close to the kitchen, which is the point.
