Tucked inside the Chablé Maroma resort after a walk through actual jungle, Bu'ul is a fine-dining restaurant built around the argument that corn, beans, and chiles need no European framework to anchor a serious menu. The kitchen leans into recado rojo, pipián verde, and Oaxacan chocolate with the confidence of a place that has nothing to prove to risotto. Mezcal pairs well with dessert, and the setting makes that feel completely reasonable.
