    Tavel Bristol-Joseph built his Austin reputation on pastry, so opening a modern Caribbean restaurant rooted in his Guyanese childhood was a genuine pivot. The cooking runs tangy, smoky, and coconutty, with fermented jerk seasoning and a roti that disappears faster than you'd expect. He earned a James Beard semifinalist nod, and the New York Times put Canje on its national restaurant list the year it opened.
