The dining room faces the Pacific at the Rosewood Miramar Beach, which sets up certain expectations that the kitchen then politely ignores in favor of a serious Italian-leaning prix-fixe. Chef Massimo Falsini pulls Santa Barbara uni from a local diver and produce from an onsite garden, and the cooking earns both a Michelin star and a Forbes Five Star. Dress accordingly and book early; the leather booths fill with people who planned ahead.
