    Cavalta sits in Triana, across the Guadalquivir from the cathedral and Alcázar crowds, in the neighborhood that gave the world flamenco. A 12-room boutique hotel in a corner building with wrought-iron balconies and ceramic tilework, it holds a Michelin Key. Rooms run simple and modern, exposed brick, wood floors, a pop of emerald green here and there. The rooftop garden, pool, and cocktail bar are where things loosen up, and the on-site restaurant draws locals as well as guests.
