A casual bistro near the old tobacco factory in Los Remedios, with big glass windows and a kitchen that lets the ingredients do the talking. The chef blends Basque and Andalucian instincts on a menu built around prized Spanish meats, Galician seafood, and fish from the Conil auction. Nothing is fussed over beyond what it needs, which requires considerably more confidence than it sounds.
