Jean-Luc Boulay, a familiar face from the Canadian cooking show Les Chefs, runs this warm bistro in Old Quebec with chef Arnaud Marchand, and the pair have made boreal cuisine their whole project. Lunches are short-menu and easy on the wallet; evenings go longer and richer, leaning into Quebec beef and foraged northern spices. The room feels like a French bistro that wandered north and decided to stay.
