  1. Fermentation jars line the shelves and the room is always packed at this creative sharing-plates restaurant on rue de Paradis. Franco-American chef Thomas Chisholm, a former Top Chef contestant, runs a kitchen that wanders freely across borders, landing somewhere between sustainable fine dining and genuine playfulness. The food follows the seasons and leans hard on foraged and agroforestry ingredients, with globetrotting flavors folded into each dish.
