The team behind Carousel, where the chef changes every week, decided they wanted something a little more permanent and turned their wine bar into this Mexican restaurant on Charlotte Street. Windows open onto the pavement when the weather cooperates. The menu is short and grill-focused, built around crudos, small plates, and a few larger cuts to share, with an ex-dairy Lake District sirloin cured in-house for sixty days doing a lot of the heavy lifting.
