A small French restaurant in Akasaka devoted to the cooking of Landes, the southwestern corner of France that rarely gets its own flag planted in Tokyo. The chef learned the cuisine directly from a Landes native, and the menu stays loyal to that education: duck confit, foie gras terrine, pâté de campagne. The garbure, a slow-simmered ham and duck bean soup, is the dish the room clearly comes back for.
